Type / anywhere and pick a block type — heading, to-do, table, callout, code. It's faster than memorising a binding for every block and it's how most of Notion is built.
Restructure without dragging
Tab and Shift+Tab nest and un-nest blocks, and Ctrl+Shift+↑/↓ (⌘⇧↑/↓ on Mac) moves a block up or down — reorganise a page entirely from the keyboard.
